Welcome to the vegetarian restaurant Amaranth. The word 'Amaranth' comes from Greek and means 'the one that does not fade/eternally blooms'. What could be a better slogan for the culinary challenge: vegetarian/vegan cuisine in the Swabian province? In early 2013, we opened our small vegetarian restaurant on just 33 m² at the edge of the Marbach old town. Five years later, we moved (just a few steps further) to the historic 'Gasthaus zum Schillerhaus'. For some time now, we have consistently been number 1 among the restaurants in the city on the review platform Tripadvisor. 'Amaranth' is not only a pseudocereal from the Andes and a type of amaranth plant that occurs in almost 100 different species worldwide, but it is also the name of a color, a genus of birds within the finch family, a type of wood, a hedge fund, and an island in the Mississippi. Just as diverse is the culinary offer that awaits you at the Marbach restaurant 'Amaranth': from crisp-fresh salads with the highly praised dressing to various pasta dishes, Indian curries, Asian vegetable and tofu dishes, to delicious tarte flambée. Everything is meatless and without flavor enhancers – there should be something for everyone. And for dessert, how about a warm chocolate cake on orange sauce? Delicious! Enjoy relaxed Swabian hospitality – whether in winter at a cozy warm spot by the tiled stove or on mild summer evenings on the terrace overlooking Schiller's birthplace.
