One theory suggests it comes from an old custom of placing a lid on a beer or wine glass to protect it from flies or dust. To prevent the lid from being blown away by the wind, an olive, a piece of ham, or a slice of bread was placed on top as a weight. Regardless of its roots, tapas are an indispensable part of Spanish culture.
