Tapas have a long tradition in Spain, and while various legends surround their origin, the Spanish word 'tapa' means lid or cover. One theory suggests it comes from an old custom of placing a lid on a beer or wine glass to protect it from flies or dust. To prevent the lid from being blown away by the wind, an olive, a piece of ham, or a slice of bread was placed on top as a weight. Regardless of its roots, tapas are an indispensable part of Spanish culture. The different tapas presented throughout Spain reflect the culinary diversity of the Iberian Peninsula, with a strong emphasis on naturalness, traceability, and quality.
