The story starts with the arrival of Riza, the family's first donkey, who took residence in a small wooden stable adjacent to their home. The name Riza, a derivative of a Greek female name meaning 'freedom', reflects the family's deep appreciation for the symbolism that donkeys hold, particularly during their travels to Greece.
For the Knolls, vacations in Greece represent not just a respite from daily life, but also a connection to the natural world, freedom, and the companionship of these gentle creatures. The decision to incorporate donkeys into their pilgrimage program is an extension of their values, offering an opportunity for participants to connect with nature and embrace a slower pace of life.
